It’s tricky as each house is different. Generally, a water line is tapped from under a sink where you will look for a 1/4 line to a shut-off valve, but it can also be installed in a crawl space or a basement. When I ran into this in the past, we usually just shut off the main, then open a faucet to bleed the lines, and release the pressure then hook up the fridge and turn it back on. This is a temp solution while you hunt for the valve. After that, it’s hard for me to say where it is in your home as in every house, it can be in a unique spot. The really weird old homeowner didn’t have the answer for you. But if by a sink, check that spot first, then basement next if you have one.
