      Is there an easy way to disconnect an ice maker from a refrigerator? As in, I don’t want to use it at all. It’s a Samsung French door (obviously with an ice maker)

      If in the bottom freezer, then yes. It is very easy to unscrew it from the sidewall, remove it and unplug it from the connection. You would need to turn it off from the setting as well, so it doesn’t call for water. If it doesn’t have that setting, go to the back of the unit and unplug the solenoid valve (where water comes in, usually blue)so it doesn’t make noise every time it tries to fill. Not a big deal to remove. If in a French door, then it is built-in as part of the unit.
